XOLO was born from a simple conviction: that Mexican cuisine deserves to be told in its original language, not translated or softened for another palate. Every recipe we serve descends from generations who cooked with patience, technique, and respect for the ingredient — the cuisine of Puebla and Yucatán, as ancient as it is complex, as simple as it is deep.

It’s not Tex-Mex. It’s not an adapted version. It’s Mexican cuisine in its most honest form, with roots reaching back to the pre-Hispanic — roots we are committed to preserving for future generations — made here in Wales with the same dedication as it’s made back home.

Today, every dish that leaves our kitchen is born the same way: slow recipes from Puebla and Yucatán, made from scratch, no shortcuts. Cochinita pibil that simmers for hours. Mole ground and stirred by hand. Aguas frescas made fresh every morning with natural ingredients. This isn’t fast food dressed up as Mexican — it’s the cooking of our home, shared with yours.
